Steam is principally used for pasteurization or system sterilizing duties. However, due to its aggressive nature, steam can contain a high degree of metal fines or physical particulate, which if not removed, could contaminate product contact surfaces or damage valves. Typically, culinary grade steam is a pre-requisite to reduce the risk of the physical hazards present within steam. For steam filtration, this requires 95% removal of particulate greater than 2µm in size.
