To protect the flavour and characteristics of your wine during storage, it is essential to reduce the risks of microbial contamination as well as the capacity for oxidation.  To ensure your wine is kept fresh during storage, nitrogen gas is used to purge air out of the tanks so that your wine is kept in an inert environment in the vessel.
